🥬 When to Plant Cabbage

Cabbage is a hardy, productive crop that stores well and is perfect for sauerkraut and coleslaw. It thrives in cool weather, forming a dense head over two to three months of steady growth, and it tolerates frost even after heads begin to form. That cold tolerance is what makes cabbage such a flexible crop: most zones can fit in a spring planting, a fall planting, or both, using the transplant dates in the calendar above.

Choosing a Cabbage Variety

Cabbage varieties fall into a few practical groups, and picking the right one matters more here than with most vegetables since maturity times vary so widely. Early types, sometimes sold as Golden Acre strains, form small, tight heads in 50-70 days and are the best choice if you want an early harvest or a second planting in fall. Midseason varieties take 70-90 days and produce larger heads with good all-purpose flavor for fresh eating. Late storage types, including Danish Ballhead strains, need 80-105 days but cure well and keep in cold storage for months, making them worth the wait if you’re planning to store a crop over winter.

Beyond maturity date, look at head type. Smooth round green heads are the standard slaw and kraut cabbage. Savoy types have crinkled, deeply veined leaves that are more tender and mild, and hold up well in soups. Red cabbage varieties add color to slaw and pickle beautifully, though they generally mature a bit slower than comparable green types.

Spacing, Sun, and Soil

Cabbage needs full sun, at least 6 hours of direct light a day, to form solid heads. Space smaller early varieties 12-18 inches apart and larger storage types 18-24 inches apart, with rows 24-36 inches apart to leave room for the sprawling outer leaves. Cabbage is a heavy feeder, so work compost or aged manure into the bed before planting and aim for fertile, well-drained soil with a pH between 6.0 and 6.8. Soil on the alkaline side of that range also helps deter clubroot, one of cabbage’s more persistent diseases.

Watering

Give cabbage 1 to 1.5 inches of water a week, including rainfall, and keep it as consistent as you can. Uneven watering, especially a dry spell followed by heavy rain, is the main cause of split heads, since the roots take up water faster than the head can expand. A 2-3 inch layer of mulch around the base helps even out soil moisture and keeps weeds down while heads are forming.

Top Growing Tips

• Start seeds indoors 6-8 weeks before your zone’s transplant date, then harden off transplants for about a week before moving them outside.
• Consistent watering, roughly 1-1.5 inches a week, is the single biggest factor in preventing split heads.
• Row covers keep cabbage worms and loopers off young plants; pull them once flowering companion plants nearby need pollinator access.
• Side-dress with a nitrogen-rich fertilizer three to four weeks after transplanting to fuel leafy growth before heads start forming.
• Cabbage tolerates frost and even light freezes, so there’s no need to rush protection in fall unless a hard freeze below 20°F is forecast.
• Mulch around the base to hold moisture and keep soil temperatures steadier through summer heat.

Common Problems

• Cabbage worms and loopers chew ragged holes in leaves and hide along the midrib. Handpick when you spot them, cover young plants with row cover, or treat heavier infestations with Bt (Bacillus thuringiensis).
• Head splitting follows uneven watering, usually a dry stretch broken by heavy rain. Water consistently, and if a head is already firm and rain is coming, twist it a half turn to break some roots and slow water uptake.
• Clubroot is a soil-borne disease that stunts roots and causes wilting even in moist soil. Rotate brassicas onto new ground every 3-4 years and keep soil pH above 6.8 to make conditions less favorable for the pathogen.
• Aphids cluster on leaf undersides and in the folds near the head. Knock them off with a strong spray of water or encourage ladybugs, which feed on them readily.

Companion Planting

Good companions: beets, celery, onions, potatoes, and dill grow well alongside cabbage. Dill in particular attracts the small parasitic wasps that prey on cabbage worm eggs, and aromatic herbs planted nearby can help mask the scent cabbage moths use to find host plants.

Avoid planting near: strawberries and tomatoes, both of which compete for the same soil nutrients cabbage needs heavily and can stunt each other’s growth when planted too close.

Harvest Timeline

Cabbage is ready 50-105 days from transplant depending on variety: early types at 50-70 days, midseason at 70-90 days, and storage varieties at 80-105 days. Harvest when a head feels solid and dense when you squeeze it, before the leaves start to loosen or the head splits. Cut the head at the base with a sharp knife, leaving the outer leaves and root in the ground; many varieties will send up several smaller secondary heads from the stump within a few weeks. Storage varieties keep for 3-4 months in a cold, humid root cellar if harvested before splitting and cured with the outer wrapper leaves intact.
